This is my first time to use the ganache and I was wondering if you can write with it or do you just have to drizzle it on to cakes. How long do I let it sit as well before using it?

You can use ganache to write with, just make sure you have the right consistency or it will pool on the cake. Let it firm up for a while (put it in the frig). I just keep an eye on it, checking the consistency until its ready (think of runny fudge) you want it to be "just" fluid.
If it gets to thick (sometimes I forget about it and it gets to cold icon_rolleyes.gif ) just pop it in the microwave for a few seconds.

You can pipe with it, just like BC or royal.

As for letting it sit? Before what? After what? Can you give more detail on what it's sitting for?....the whole cake? what?

...ya gotta let it sit before ya can pipe with it....its runny when its done...

I love it whipped and in between layers....mmmmmm...sooooo dang good!!!! icon_biggrin.gif
