Refrigerating Fondant

I was told that fondant should not be refrigerated. I live in Florida and need to put my cakes in the refrigerator because of the type of fillings and the extreme heat and moisture. Can anyone clear this up for me?

I have heard the same thing because I think it sweats when you take it out of the fridge and it would mess it up but if you buy FondX brand you can refrigerate it. It is designed to be put in the fridge without condensation and from what I can tell from using it, it works. It's made by Caljava in California but you can get it from Pfiel & Holing (www.cakedeco.com) for less. If you refrigerate alot of your cakes, it might be worth a try. It's great to work with and its yummy too!

I have heard that you can and cannot refridgerate. Some people say they don't have a problem. It will sweat when you take it out and if you just leave it alone it will be fine. Others have said colours run with the sweating problem. I don't refridgerate so this is only what I have heard.
