2" Cake In A 3" Pan?

Do you think it would be okay to do this? I am doing a stacked cake with 3 tiers and the bottom 10" is a 2" deep and the top 6" in also 2" deep. All I have for the middle is and 8" round that is 3" deep. Wondering if this will be okay?

Yes, it will be fine. I just took 2 out of the oven in 3 inch deep 8 inch rounds. They baked up to about 2/3 of the pan, which was perfect. I'm making coconut cake and will torte each layer to make 4 layers. The only problem, is that it will dome a bit in the center (I even used bake even strips. But all you have to do is cut it off to level it .

I'm hooked on only using 3" pans - even if I only want a 2" high cake. Your going to find that it comes out even better - the top of the cake doesn't have those crusty edges icon_cry.gif and there is actually more "usable" cake when you use the 3" high pan. I only put the quantity of batter that I would if it were a 2" pan. This will save you in having to buy 2 different height pans too - use 1 pan for 2 sizes.
