Tasting Appt W/1 1/2 Days Notice.............help!!!!!!!!!!!

Oh my gosh I am up a creek.I just agreed to a tasting for this sunday at 11am,so now I have to figure out the best option.does anybody have a recipe for amaretto BC/filling AND a mocha BC/filling?????PLEASE I am desparate,these are the fillings they want to taste with thier choc cake icon_cry.gif AND this is new to me,cause no ones ever asked for tasting my cakes before,they all just accept icon_eek.gif so should I make mini cakes, maybe 4in rounds, or do 6in cakes so they can be cut in slices??OR are there other options??OH MAN PLEASE HELP ME WITH ADVISE icon_cry.gif TIA icon_smile.gif

BREATH!

both can be adapted from reg. BC

(and no, I'm not going to offer recipe -- but insight into how I improvise)

my BC recipe calls for 1/2 cup of water...

now if I take it and add cocoa powder I get chocolate BC
and if I use strong coffee for part of the water I get mocha. (chocolate+coffee)
I do it to taste.

as for amaretto -- do they just want almond flavor -- well then use almond extract for part of flavoring added to BC

for do they want the real alcohol? well, then back to subbing the alcohol for part of the liquid.
again to taste.

how about > cupcakes if all they want is to taste. can make them in the flavors.

leave cupcakes "nude"

have icings in bowls w/ spatulas (or in bags w/ star tips -- let them try their hand and see how easy it isn't)

and then they can mix and match frostings to cake flavor all they want

(hmmm i wonder how mocha amaretto frosting combo would taste?)

I haven't tried this yet, but I'm thinking of buying one of those Starbucks bottled mocha flavored coffees to add to cakes and BC. It sound good anyway......it's still on my list of "experiments!"

Im with Doug... thats what I do is make cupcakes in whatever flavors and icings (my kiddos and the neighborhood friends always eat the rest--no waste in our house). then mix and match. If I happen to have done a different flavor cake earlier in the week... I will offer that just for variation.

You will do great... dont fret!

addendum:

i'd do MINI cupcakes -- little ONE biters.

that way easier to taste multiple flavor combos w/out becoming overfilled.

these could come from the extra batter of full size cakes.

For tastings, I bake small cakes and slice into wedges. Freeze all wedges except 1. Use this one wedge, along with other wedges of different flavors to make a small cake.
