My neighbor asked me for a lemon cake for her birthday, so since she is so good to my kids (she has no kids of her own so she borrows my kids to go to kid type places), I decided that I would make her the cake. I go to0 the store (Von's... 10 for $10.00 sale) and there is no lemon cake, so I get white cake and doctor it up. I mixed it up and put it in the oven and it smelled heavenly! I take it out of the oven and let it cool in the pan for about 20 minutes (9x13) and flip it over and when I lift the pan, half of the darned thing stayed in the pan! I don't know why I chose a white cake when I knew I didn't like white cake! Dang! So I had to bake another cake..... only this time I doctored a yellow cake mix! But the family is happy because they get to snack on cake!
Is it just me, or is white cake really different than yellow cake?
Yellow cake is made with the entire egg - the yolk making it yellow - white cake is made with egg whites which keep it white. It's generally made with meringue.

I have a really good white cake recipe. If I want it really light and airy I use cake flour, if I want it a little denser (for stacked cakes) I use regular flour. It has almond flavoring in it and I think it's really yummy. I haven't had any trouble with it being more difficult to work with.

I have always disliked white cake, but I LOVE the White Almond Sour Cream cake recipe on CC. I can't make it for practice, or I will eat all of it!
