I am having some issues with the Wilton recipe for Royal icing. I like the way it pipes, except for when I do dots. I usually leave little peaks when I lift up, not on purpose, that's just what happens when I do dots! So I dampen a little paint brush with water and push the tips down. Later, after the Royal has dried, it has little holes in those spots. Like I had hit an air pocket or something and opened it up. What can I do to avoid this? Please help!!!

Is it possibly the water drop that stuck to the icing made a dent?
Try just a damp finger next time.

Once there are bubbles in royal icing there's very little you can do. Try using a brush with a teensy bit of oil on it to push the bubble down, instead of water as when you use water is discolours any colour you have in the icing. I agree with cowdex, it could be that a water drop stayed on the icing and melted a dent into it. I hope this helps.

When mixing your royal icing try mixing on low, maybe that will get rid of the initial air bubbles. Also, instead of using water to push down the peak on your dot try putting your finger in powdered sugar and then pushing it down. It's always worked for me.

The peaks will happen with royal and you should use powdered sugar on your finger, I wouldn't use oil as it may have an effect with the icing.

Thanks for the replies! I'm sure the powdered sugar will do the trick.
The answer seems obvious now that I read it here!
Now I feel silly for asking icon_redface.gif
