I have a wedding of 300 comming up in the fall. How could I freeze cake ahead of time or is that a bad idea? How far ahead could I start baking before the due date?

I have a wedding cake coming up that is very large. I plan on freezing my cakes, but not for too long. I will probably start baking on Mon. or Tues. of the week of the wedding, but I wouldn't be afraid to start earlier. I have frozen a cake for 2 weeks before with good results. I just prefer not to. I just want to allow myself enough time to bake and not stress out over it icon_wink.gif

you can freeze for up to 1 month. i personally wouldn't go any longer. not only does freezing save time but it makes your cakes more moist. i freeze EVERY cake i make. make sure you wrap your cakes WELL with saran wrap and then with foil. and defrost with the saran still on.

I agree with redsoxgirl that you can freeze up to a month ahead of time. I probably wouldn't go much longer than that. I freeze every cake I bake, for a number of reasons (I think it keeps the cakes very moist, plus it's much easier to ice them when they're still semi-frozen). After I bake a cake, I let it cool and then wrap the entire pan (with the cake still in it) in heavy duty aluminum foil (no saran wrap). When I take the cake out of the freezer to ice it, I take the foil off immediately and then let the cake sit out for 15-20 minutes (longer if I need to torte it, because it is very hard - and dangerous! icon_surprised.gif - to torte a cake if it's frozen), and then it's good to go. If you don't take the foil off the cake as soon as it comes out of the freezer, it will get soggy quickly. HTH! icon_smile.gif

I froze a wedding cake 6-8-10-12-14-16 for 4-6 weeks and it was wonderful. I made cake on my days off for about 2 weeks and froze them as I made them.

I think I did a boo boo! I baked a cake a few days ago and I wrapped it in saran wrap and put it in the freezer, will the cake be icky since I didn't use aluminum foil? Also, should I let it defrost totally before icing it?
