I know it's cake with custard filling and I assume chocolate ganache on top, but would I use yellow cake or is there a specific Boston cream pie cake recipe?

Thanks.

I used a yellow butter cake. icon_smile.gif

The original recipe called for making a sponge cake:

A lot of Boston Cream Pie recipes call for sponge, but I have also seen recipes using yellow butter cake. I think yellow cake is too heavy, but that's just me.

My favorite recipe for Boston Cream Pie is from Gale Gand. The cake is so tender, light and moist, sandwiched with pastry cream and topped with ganache. I love it.

Had a groom last month that wanted this for his groom's cake. I used a yellow cake mix, a sleeve of Bavarian Creme, covered with chocolate fudge icing (he didn't want ganache). He proclaimed it the best cake he'd ever had!

Hi ~ BCP is a very delicate sponge cake. Extremely light & airy; never heavy. I was born in Boston ''many, many years ago and no matter where we went, it was always the same. Light, airy filled with a custard and a chocolate ganache on the top.
You could make it with a yellow cake mix but then it really wouldn't be BCP. icon_smile.gif

Just the top of the top layer is covered with ganache. Fondant is too heavy and would ''squish'' it down.

I have made individual BCP tiers and decorated them. I haven't had an occasion to stack them but I don't see why you couldn't. When I do decorated tiers, I just add an icing dam, fill with the custard and then cover the entire thing with ganache.

Edited to add: I never have to trim my tiers so I don't need a crumbcoat before I do the ganache. If you do crumbcoat, I'd make it a very thin crumbcoat.

Thanks, I am going to try it within the next few weeks. Thinking it would make such a great wedding cake and one that isn't used all that often for a wedding.
