Obvious one...

Cover EVERYTHING in your contract! Note what is included with your cake. List what is NOT included with your cake (with a note specifying that this is not an exclusive list... anything not specifically mentioned is still not included) List your serving size and th number of servings your cake will yield. List the flavours & fillings. List serving recommendations & storage recommendations (room temp or refrigerated, etc). List any samples pending or provided (so if they never give it to you, that's shown). List whether or not you will gurantee a nut-free status. Make a note that they MUST inform you of any allergies prior to booking the order. List your payment terms. List your delivery (or not) specifications.

what have I missed?

I must admit, these are the kinds of things I should be thinking of but never do. What about listing how many people are expected, wether the function will be indoors or out (so you can maybe arrange a covered area for the cake to be placed). Is the cake going to be served as an after dinner desert (smaller pieces) or as the main item like a champagne and cake function (larger serves). That's about all I can think of for now.
