I have a cake for a rehearsal dinner to do this week. I have three tiers of square cakes (10, 8 and 6 inch), to be covered in white BC. My intention is to put red fondant ribbon around the base of each level, paint with shimmer dust to give it a little sparkle, and then apply white hearts with royal icing. My question, since I almost never work with royal icing, is will it adhere to the fondant and stay stuck. The cake has to travel over an hour and I will not be the one assembling it, so I want it a sure-fire as possible. If I have to, I will use fondant hearts, but I would prefer to do more of a freeform style heart, hence the desire to use royal.

Please advise...getting nervous.

Thanks!

I think as long as it has dried long enough on the fondant before you transport it should be fine.
