Hi everyone, I need big help tonight!! Cake due tomorrow at 3pm. After making my cakes 3 times because of my oven the 3rd time worked right. When I made my buttercream frosting this evening, I used 1/2 shortening and 1/2 butter also I use milk and not water, I have never used butter or milk in my frostings. After adding my powdered sugar my frosting became very grainy. Does anyone have any ideas?????????? Besides making more frosting icon_cry.gif , my dh will not be to happy.

Thanks everyone from cakecentral.

Did you sift?

was your powdered sugar sifted? When that has happened to me, I add a teaspoon of water one at a time until I reach a consistency I like. If this doesn't help, at least its a BUMP

This has happened to me a few times. I honestly don't know why, other than maybe that particular bag of powdered sugar was old or not ground finely enough. I just started over with a new bag of powdered sugar, and the next batch turned out just fine. It's very frustrating, I know. icon_sad.gif

Thanks for your help. Yes it was sifted. What would happen if I add some karo sryup to the frosting. Do you think this might help

I'm not sure what to tell you about adding karo syrup. I've never tried that. From my experience, there's not really anything you can do other than making more frosting. icon_sad.gif

I've had grainy icing on occasion, and the couple times I did not remake it, I just let it sit overnight and it was fine the next day.

There have been only a couple of times where I have had grainy frosting.
The one time I had grainy frosting is when I used generic shortening from my local grocery store. After I allowed it to sit overnight it was fine. I went back to using Crisco and I don't have a problem like this again.
The other time was the powdered sugar I was using. So now I like to use C&H or I will use the stuff you can get a Sam's Club.
At Sam's you can get 7lbs of 10x powdered sugar for no more than $5 I believe.
