Crusting Buttercream Won't Crust.....what Did I Do Wrong???

I just made a cake......and used crusting buttercream that I made and refridgerated overnight. Now it won't crust. What's wrong with it????

Please help........

How long did you wait after you iced it? I let mine crust for at least 20 minutes. Also, I freeze and refrigerate my buttercream and have no problem with it crusting.

Give it a while - if you just made it - the moisture in the air could be slowing it down. Be sure it is getting air circulation (not in a box).

I guess its been about 20 min.....were in Hawaii and it's a little humid.....maybe it's just taking a while to get back to room temp. I'll let it sit a little while longer.

Now it has got little beads of water on it. I think its too humid and that is why it isn't crusting.
There is no way to get away from this humidity. What can I do to get it to crust??

what is the consistency of the icing? You might add a bit more sugar to it if it is on the thin side. I live in CA and it's been really humid here (I live in the beach cities area) and while my icing has melted some it hasn't dripped. Tey the sugar.

The beads of water are fine - don't touch them. Did the cake or the icing or both just come out of the fridge?

Yep, both.....I froze the cake and refridgerated the icing. Heard it was easier to frost a frozen cake!!

I think all should be fine when everything comes up to room temp....but by this time you have figured it out, i hope icon_wink.gif
