Finally Tried Doing Imbc - It Turned Out Ok - Need Help!

So last night i started to the the recipe ShirleyW posted here for IMBC. I used the "all whites" brand. It turned out well after a while of beating the heck out of it. i'm sure it could have turned out a whole lot better. so i need a bit of help please?! Oh BTW the taste is lovely! love it, and i'm very picky. So here's my mistakes...
i started whipping the egg whites, but not far in advance that the sugar melted before the eggs were ready. the sugar cooked so much that it was not very soft and runny by the time i poured. When i started icing the cake i noticed bits and pieces of hard sugar. ![]()
Then i decided to give it some color, i used blue. The IMBC has more freckles than i do. ![]()

I'm attaching a pic, it was the best i could do late, late at night. in the mid of wanting to try this recipe and baking + decorating 30 cupcakes i need for today. never finished the cupcakes!
So please help me, how can i make it better for the next time. yes i'll continue to do this recipe as i have tons of egg whites in the fridge now.
co-worker will enjoy the free cakes.

let me just say im impressed you got hte just whites to work! i've tried those, and never had success. maybe i gave up too soon. how long did you whip them to get to stiff peaks? i could never get them to do more than foam. so i've been using real egg whites and they whip up beautifully! so if you use just hte whites again, i would whip them first and when they look almost ready start your sugar syrup. when the egg whites are done, i would just stop your mixer until the sugar syrup is done and then start again. at least, until you figure out the timing. i use WBH's recipe and i LOVE it!! tastes soooo good.
so really, how long did you beat the whites? i would love to be able to use them cause its so convenient!
i really don't know exactly how long it was, i know it was a while.
I will keep you tips in mind and do it that way next time.
I also think i had a problem cause it looked like my beater in the KA was not reaching all the egg whites. You know like it was too high or something. So i picked up the bowl a bit and make sure it grab them all while beating.

So i placed the cake in the kitchen at work, it's gone! in a matter of a few minutes. This time i cut it into small squares to make sure more people have. cause they tend to cut them into triangles type of shape.
Everyone says they love it. One said she was gross out by the color and wouldn't eat the icing. lol
So they like the not soo sweet icing! ![]()
good! its always so nice when people eat up the cake really fast. a real confidence booster!
