I want to make zoo animal figures for my sons bday cake. How far in advance can they be made and should I use half fondant half gumpaste or add certain amount of gum tex? What is best???

Once the figures are made, store them in a cool dark place and they'll keep indefinitely. Do not put them in an airtight container, or they will soften again, but maybe in a small cardboard box or something like that. When I made my son's cake, I started making figures about 2 months in advance and just stored them in a box in a cabinet with a sheet of waxed paper over them to keep the dust off.
Many people use a 1/2 gumpaste, 1/2 fondant mixture which dries faster, but I've always used straight fondant with no problems. It's just a matter of preference, I guess.

I also use straight fondant. I think it is better to work with because it doesn't dry too fast and gives you time to make it just right.
