I'm sure the answer is here somewhere, but i haven't found it yet and i've read quite a few posts...lol. On July 21st, we need 200 sugar cookies for a wedding. The couple have had a few tastings and have chosen the NFSC recipe. All I really need to know is, Is it ok to make the dough now and then freeze it until closer to the wedding date. I've never froze cookie dough and do not know exactly how long it will keep....etc. Please if anyone knows...please tell me.....Thanks!

Absolutly!!. I make my cookies for christmas starting in October. I bake then put in zip top bag and in boxes(I use the one that hugs juices come in) then wrap the box in plastic wrap. They taste just as fresh as the day I made them.

I've frozen NFSC for 4 weeks and it turned out fine. I've even baked and decorated with royal icing and froze the cookies and they defrosted just fine.
200 cookies, that's a big order.

My nephew graduated on a weekend that I had 2 weddings, so his cookies were baked and frozen way ahead of time. I made a point to have one at his party and they tasted like they had just been pulled from the oven.

YES YES YES YES!!!! Make that dough up now....less to worry about...I have frozen it for up to 8 weeks and not noticed a difference in taste or texture. Good Luck icon_smile.gif

Now has anyone made dough, froze it, thawed it out, made cookies and then reftroze (sp?) the cookies? Too many questions?

i always have cooie dough in my freezer and have never had any problems. i run a home day care and bake quit often so the kids LOVE it when i walk to the freezer LOL they know they are getting cookies or cake lol

when i get cookie orders i will make up a batch of dough anywhere from a month to a week ahead of time. then take it out when i get my baking time at night (kids in bed, dh getting ready for work, 3rd shift) i've also refrozen baked cookies to decorate at a closer date and they taste just as fresh and good as if i had baked them the night before.
not sure about freezing decorated cookies though, not sure if the thawing process with icing would make the cookies mushy or run colors.

Yep! I have done this many times. The trick is to wrap and seal those cookies really well so that they dont get freezer burned!

Thank you all for your help. This is the first time I have ever had this big of an order and was about to go into panic mode thinking I was going to be making and decorating cookies probably up unitl 30 mins before the wedding...lol. Thank you all. Now I can take my time and not feel so stressed about it. You all are wonderful!
