I need some new filling recipes that can be used in high heat/humidity. I always use the store bought raspberry filling and would really like to try something new. Any ideas? I am dong a 10" vanilla cake with a 8" chocolate cake stacked on top next week and would like to try some new fillings.

TIA!

I have a soft spot for lemon curd myself. Either that or mocha buttercream (throw some instant coffee crystals into BC and wala).. Both sooo good.

Nutella spread, almond paste, coconut pecan frosting (the recipe on this site is to die for and it makes a great filling, even without the pecans). Hmmm, I see a nut trend here! LOL

I had a cake yesterday that had crushed pineapple for the filling. I thought it was great.

I just did a cake this past weekend for my sil that was 3 tiers. The top was strawberry with bananna mousse (yummy and VERY easy to make), the middle was chocolate with cookies and cream filling, and the bottom was orange with cream cheese filling. All of them were out of this world. I was so happy and proud of myself!! icon_biggrin.gif

1 box of bananna cream pudding (instant) and instead of milk, put in heavy whipping cream. Whip it with a wire whisk. Very simple and VERY yummy!!!!
