I just finished delivering and setting up the latest wedding cake - The main cake was a 16" with a 12" stacked on it, then an 8" on pillars. The 16" was setting over one of the Wilton fountains. (some folks say this is "outdated" but it really look elegant) There were 4 satellite cakes - one was a 10" with an 8" stacked and then a 6" on pillars, the next one was an 8" with a 6" on pillars, the third was an 8" with a 6" stacked and the last was just a 6" on a plate. Real (organic) Red roses were used between the tiers and on top of all of them. It is 90 degrees here today - so I used "Stay Ice" in the icing to help stabilize it, and it worked beautifully. I had a multitude of people watching me set them up, so I was a nervous wreck the whole time. The Bride's Grandma was taking pics of me setting it up too. I'll post pics as soon as I get them back.
There was some stringwork on all of the cakes, and I didn't loose one tiny bit of it on the trip there. That really made my day!
I can now breathe easy and get some sleep.
I read about it on ladycakes and knew I had this July wedding coming up, so I ordered it from her. It is a powder - I just mixed (needed to be sifted) it in with the powdered sugar. It did not add any odd flavor or texture to the icing at all. The icing still crusted like it always has too. It worked perfectly. For my recipe of icing (snow white buttercream on this site) I used 1 and 1/2 teaspoons of it.
We had to transport the cake in our truck (there is a padded liner and cap on it) which obviously has no a/c. Anyways, the cake held together beautifully. The reception hall where this cake went also has no a/c other than what it can get from the sanctuary (which is the next room over) so the room was rather warm too. I am a firm believer in it, that is for sure.
It drives me nuts when people watch me set up wedding cakes!!! It makes me soooo nervous!!! It's especially bad when the wedding ceremony is at the same place as the reception and the bride or groom decides to come watch the setup (yes, that has really happened to me a few times!!!!)!!!!!!!!!! ![]()

Your cake(s) sound like quite a masterpiece, can't wait to see the pics. I have yet to do my first wedding cake, but I'm sure I will find out the finer points of being "watched" sooner or later.

I was sooo nervous. They loved though, thank goodness. Their family has been buying my cakes for a couple of years now, but this was the first wedding cake they have bought.
Not sure if it is considered a masterpiece, but thank you for the kind words! I think it looked nice, and I have heard from some folks who were at the wedding that it was a hit.
I took pics from different angles, I hope they turn out. (I HATE not having my digital camera.)
