Texture: Mmf Vs Satinice And/or Fondx

Is mmf chewier then say satinice or fondx when left uncovered on a cake?

In my opinion yes. All around I prefer the taste and texture of Satin Ice (or FONDX-but it is hard to get here!) over MMF. It is also so much easier for me to work with.

Maybe it's just me though...I never could get a batch of MMF that I truly loved the texture of! It always was, I'm not sure how to describe it, too "springy". I don't know, that may sound crazy but I don't like the elastic quality that I always got. (When you roll it out it, how it shrinks back a bit! YUCK!)

My Favorite to use is Fondx! icon_biggrin.gif It tastes great and one of the best things about it is that you do not have to use tons of powdered sugar or cornstarch to roll it out. A little bit of crisco does the trick. thumbs_up.gif

I used MMF for five years - never tried anything else. Several months ago I opened an account with CK Products, so I decided to order some Satin Ice just to try it --- boy am I glad I did!!!!! It is completely different. It is so easy to roll out, easy to use, and the texture is so smooth - much less chewy!

I just tried CalJava for the first time and I hated it compared to MMF - too soft and did not hold a shape. Now I'm hesitant to try FondX, though I have heard wonderful hings about it.

I love the MMF recipe a CC member gave me (I can't remember who icon_redface.gif ) - it's perfect for both covering a cake without creases and making figures. I actually prefer the texture of MMF:

16 oz MM
2lb powdered sugar (I don't end up using it all, though)
3 T water
1 T glycerin
2 t flavoring

I'm a Fondx convert too! I could just never get MMF right. Fondx is less chewy and seems to take on the flavor of the buttercream underneath. Plus I can get a 10 lb bucket of it at my cake store for $32. When you think about the time involved and the money to make 10 lb of MMF, there really isn't that much difference IMO.

I have tried Caljava's white chocolate fondant too and I didn't like it at all either! It was way too soft for me and I couldn't get it on the cake without tearing. MacsMom, you can call Caljava and they will send you a small sample of Fondx to try. I have noticed that Fondx is a little softer than the Wilton or Pettince, but the flavor is so good!

I havn't tried Satin Ice yet, but Fondex is AWESOME. The flavor is wonderfully light and the texture is much better than MMF. It is soft, but I like that about it.. very forgiving. I still want to try Satin Ice, but I don't care for MMF either.

I'm pretty sure Caljava will send you a sample of Fondx (at least they used to about a year ago). Here's their website....
