Hi all! I'm having a mental roadblock and need some advice.

I'm making the Orange Butter Cake from the WBH for a client and they want an 'elegant' fresh fruit filling. What fresh fruit would match?? Strawberries and raspberries seem so, well, normal.

It will be covered in the WBH buttercream.

Oh... does the WBH buttercream do well for cornelli lace?

The only thing that comes to mind is something tropical. Mango might be nice!

Hmm... Orange and Mango.

Maybe that would work - I wonder how fresh mangos would work as a filling. Anyone have any experience?

What about those mandarin oranges? With a whipped cream.

And what if you use the orange mousse filling with raspberries or strawberries on top of it? I never tried the orange mousse one but I did try the lemon mousse (with the self-made lemon curd in it) and it was really supergood!! Great fresh taste and really light (elegant icon_wink.gif ) filling!

Pd I read somewhere else in a topic about the WBH Buttercream, that it works really well for decorations, and probably for cornelli lace too!
