Hi,
I am new to the forum and I am interested in learning more about cake decorating and I am not sure where to start. About 7 years ago, I took the Wilton 1 class at a local place, but there aren't any Wilton 2 classes being offered, currently.
I would really like to learn more about using fondant, gum paste and sugaring...
Can anyone recommend a good instructional book that I can learn from at home? I need a step by step instructional book that can tell me exactly what ingredients I need and how the procedures are carried out.

Welcome. If they are offering course 3 or fondant and gumpaste you can go ahead and take those as they only require course 1. Course 2 is alot about royal icing flowers and color flow, along with a few buttercream techniques like basketweave. So, you can take the classes out of order. There is a TON of info on this site and if you do a search on a specific technique you want to learn you will most likely find information.
There are receipe on this site as well - a lot of people make Marshmellow fondant (MMF) others (like me) buy - word or warning though general consensus is Wilton fondant tastes HORRIBLE - ok for non-edible decorations etc but not good for covering a cake.
There are a couple good fondant tutorials on the adeccousa.com website.

There is lots of information on this site. You can find all kinds of recipes and tutorials, and I even found that you tube has quite a few video's. Some are teasers, for ones that you have to pay for but some are good, and free. There are tons of video's out there for each technique, but I have learned alot here. Stick around, do a search for a subject you want to know about and read. This site is a world of information!
