I'm attaching a picture of a cake I made for a friend. She loved it and so did everyone else, but I'm not pleased. The photo shows some color variation in the buttercream icing. I tried so hard to get my icing smooth and I've since learned to use a wet spatchula and that helps too. But Why did my purple icing change colors in some places where I had to fix the icing? I let it crust to use the viva method and I think that's why it messed up in color but why? Will it help to use the wet spatcula? How can I keep this from happening the next time I use a colored frosting.

Hmmm interesting. I noticed that purple fades after some time. They say that meringue powder helps to keep colors from bleeding. I have yet to experiment and see if MP does help stabilize colors. I hope someone out there with more experience can help.
