Sheet Cake For Baby Shower - 1 Or 2 Layer?

It depends on what size servings you're going for. If you want like a birthday party slice, which is 2x2", then you could do a 12x18, which would give you 54 servings. I personally like doing 2 layers for things like showers so you can have a nice filling, it just seems nicer to me. You can make each layer thinner, not a whole 2" tall, so you don't have a 4" tall cake! Make your layers like 1 1/4" or so, then you'll have a 2 1/2" cake, plus a little taller because of the filling - this way it will just look a little taller than a regular sheetcake but with a wonderful filling inside!
I didn't think about a thinner layer - that's a good idea, so I can have the best of both worlds and I wouldn't have to torte it (or would I?).
I thought the 2 layers would be too much, the 1 not enough and now you gave me the perfect answer.

I have 11x15 pans and I think that 2 layers are the way to go. I guess I am of the simpler philosophy, you can never have too much cake.
An 11x15 will give you approximately 40 2x2" servings, but if you make the pieces smaller than 2x2", then you could definitely get 50 out of it - 1.5x2" would give you 55 servings, approximately. This is especially fine since you're making 2 layers, so cutting smaller pieces will be fine, they'll still get a lot of cake - just taller instead of wider!
