Cake Batter Question

Newbie Question: I am making a three layer cake 12", 8" and 6" each will be a double layer with frosting in the middle.

I'm using box mix and my mixer only takes 2 box mixes at a time. The question is since I will need like 4 boxes of cake mix can can I put the 2 boxes of batter that's mixed in the fridge while I make the next two boxes of cake mix for the second 12" pan and then combine them and bake it? Or will me putting it in the fridge do something to it that may cause it to be flat, etc? Sorry if this sounds confusing, I'm still learning....

You should not have a problem with putting the batter in cake pans until you mix up the other mixes to add to it.

My mixer is the same. I just mix one then fill the pan. I just leave it set while I mix the next one, since it only takes a few minutes, it doesn't hurt it at all. Just be sure both 12 in. pans will fit in your oven properly. (not too close together).

I agree with both comments, just to give you that much more confidence to do it that way. Also, pay special attention to subaru's warning to make sure both 12" pans will fit into your oven, they cannot touch each other or the sides of the oven.

Another thing you COULD do is do a cake mix extender and bake (and mix) just one at a time...the recipe I use makes just enough for a 12 inch round 2 inch deep.

I also meant to add that I do leave cake batter in the fridge for a while 30-45 minutes, no problem. I think the cake mixes are more forgiving than say a scratch cake...but I havent made any scratch cakes so I dont know for sure. The advice I got about refrigerating batter is to stir it up gently and also to let it come back to room temp before baking. Also I heard that if your batter is going to sit out more than 20 minutes you should refrigerate
