Cupcake Pull-Aparts... How To??? Help!!!

Hi all,
I'm looking to bake something for my daughter's daycare end-of-year picnic (on the beach) -I was thinking about doing individually decorated cupcakes.
Now, if I do that, I need some frosting/decorating ideas that won't require refridgerationg (so I guess whipped cream and b/c go out the window?) as we'll be sat on the beach at lunchtime...
OR as it will also be a farewell cake to my daughter as we're re-locating over the summer and it'll be the last time she sees all her friends from daycare, I was thinking about doing a pull-apart which would allow me to write on top and say something like "happy holidays & farewell" ?!
I've NEVER made a cupcake pull-apart before though...
are there any instructions on this somewhere?
What do you use to cover the cakes? And then you just pull the picture apart when you want to eat them... isn't that a bit messy???
I think I'm leaning towards the individual cupcakes as I could put those in boxes and keep them in an insulated bag to keep cool...
ANYHOO, any ideas welcome... I'm thinking about doing a beach theme (not a tropical beach... more like sand, rocks and seashells) or letters or something... open to suggestions!

My daycare LOVES it when I bring in a cupcake cake because they are not messy at all (well we are talking kids...
) and they are easy and require no utensils to cut.
