I am having a hard time finding the 3 oz red food coloring bottles in our local markets.
I want to make red velvet cake tomorrow, is it possible to use some of my Americolor red insted of the Schilling's color? If so, does anyone know how much I should use?

usually food color is in 1 ounce bottles I thought.. I know some people use wilton red but I personally wouldnt use that or the americcolors
i think the main thing to be concerned with is the "taste" your red food coloring will leave. when using this much food coloring you have to use a "no taste" red food coloring or it can cause the cake to become bitter.
on red velvets i have used
wilton - no taste red
chefmaster - tulip red (recommended by the bakery supply store in my area)
Usually it is easily found. It's with the spices I think it's made by McKomics (sp).
I usually cut the color in half. It's not cheap and I don't think you need what they have on the recipe. If you use another color you can tell when your batter turns a deep Maroon color.
I use McCormick, but it is pricey. I was in GFS and I saw they have a large bottle of red food color. I forgot the price but when I go back I'm going to see if it would be worth it to just buy a large bottle. It looks like about 12 oz. I am starting to get more orders for red velvet. Maybe I will call them and find out later. I spend over $4 on McCormick.

I am not kidding you . . . 5 stores and no bottles of red food color 1 oz or larger. Ralphs usually carries their generic 1 oz bottles for 99 cents, but they are completely out.
Grrrrrr . . . its like half an hour in horrible construction traffic just to get into Mission Viejo from where I live . . . oh the joys of Orange County traffic!
When I made my last Red Velvets, I used one 1oz. little plastic bottle of red(the set that comes w/four colors) (McCormick's) and that was enough for the red color I wanted. 2 oz. seems like way too much red to me! They came out great. I know that OC traffic from trips to D-land - brutal at any hour!! ![]()
I always use 1 ounce of red food coloring and then 1 oz of water to get my total of 2 oz.
If you have some americolor then fill a measuring cup with 2 oz of water and color it until it is a shade of red you like. Then add it to the mix.
I did this one night with the wilton when I didn't want to run to the store. It works the same, you are just looking for the liquid and the coloring.
