Well I decided to try making yet ANOTHER batch of cupcakes, figuring they would do like they always do, sink in the middle. They turned out perfect!! Wooohooooo!!! 
Granted, my decorating leaves little to be desired (I'm just beginning to practice) but nevertheless, they turned out great.
Yippee! Did you figure out why they were sinking?
I think maybe the reason they didn't sink this time is because I didn't overmix (which I sometimes have a tendency to do if I'm not careful) and I didn't overfill my liners. Then again, I have made sure I was paying attention to my mixing all and they still sank on me. Whatever I did, it worked and I'm going to make sure I do it again.
