I would say you need to use what you are comfortable with and have had great sucess with since there is not much time to experiment now! That way the end result will be the beautiful cake that you want for your son's big day!

Speaking as a total novice here, LOL, have you made a red velvet cake before? I've seen the red velvet cake mixes in the store. Or check out some recipes here that are recommended?
I bake a lot just for fun but I (usually) like to experiment with recipes before I sic them on family or friends, or if it's for a family/friend bday cake this is my thing I do anyway lol, I find a recipe I want to try and half it, grab my mini cupcake tin and make a half batch, and let a few people try it, see if it's ok.
Not sure if that helps, I'm sure you all have pro tricks that work- LOL - I've never eaten red velvet cake before, not sure what it tastes like.
Not sure how much time you have, maybe to pick up a box of DH or BC mix and make a half batch of cupcakes tonight and do a test? Or whip up a quick halfbatch? (I mean without icing or decorating)
I think Duncan Hines' Red Velvet cake mix is really, really good. It would definitely be easier than making one from scratch. Be careful when you're mixing, pouring, etc. --- the batter will stain. I can't imagine how much food coloring DH must add to it!! ![]()
