icon_redface.gif I am sure this has been asked before, but has any one ever torted a 12x18 sheet cake? If you have what is the trick?

for large cakes, I use a rimless baking sheet (cookie sheet) or a cake board. Just slide it in between your layers and remove that way, then slide it back on afterwards (I find dusting the board with pwd. sugars helps a bit too)

I use cake boards to move big layers of cake. If the cake can fit in your freezer, it's easier to move slightly frozen.

What do you use? A bread knife or the Wilton thing?

I use an Agbay cake leveler: http://www.agbayproducts.com/

I was taught to use dental floss to cut the layer.
