Have A Question About Using Preserves As A Filling

I was going to make a cake and fill it with raspberry preserves for the filling. The cake needs to be one that is not refrigerated and I thought that it would be alright to use the preserves as the filling. However, I just noticed that all of the preserves in the jars that I have says to refrigerate after opening. Does anyone know if there are any preserves out on the market that doesn't require refrigeration after opening? Thanks so much.

I have used preserves as fillings before, and had no problem with it. Actually, if you think about it, the cake, and frosting act as an insulator.

It'll be ok for a day or so but after that you will want to refrigerate leftovers.

You can buy bakery sleeves of filling that don't require refrigeration.

I've used preserves as a filling before and left the cake out for about 1 day. It should be fine. Mackays makes a really good strawberries and champagne filling.

I add it to my buttercream and use that as a filling and have had no problem.

Actually, I was told that the sleeve fillings require refrigeration after opening, too.

But I think they are talking about for storage after opening in both cases, I would think that a day or two in a cake would be okay.

A couple of days in your cake will be fine.

Thanks everyone. I really do appreciate your replies. I just love the Polaner's all fruit Raspberry. Boy, oh boy, is that stuff good!!!

That is to prevent molding mostly and your cake would be nastly long before the preserves would.
