I'm looking for a good recipe for a cheesecake that will be a demo for a wedding cake. I'm not a cheesecake fan at all so any idea would be greatly appreciated!

This is for a basic cheesecake. You can add chocolate to it to make it a chocolate cheesecake, etc.
4 blocks of cream cheese (16 oz?)
1 cup sugar
2 lg eggs
1 tsp vanilla exstract
2 tbsps cornstarch
1 c sour cream
Preheat oven to 450. In a mixer beat cream cheese, sugar until smooth and light. Beat in eggs, vanilla and cornstarch until blended. Stir in Sour cream. Pour mixture into a prepared crust and bake for 10 minutes. Reduce temp to 200 and bake for 45 minutes. Turn off oven and open oven door. Leave for 3 hours.

I had the same problem, too!

Would a 9 inch pan be large enough for this cake?

Yes, I use a springform pan for this. I also use a cardboard on the bottom of it so that I can remove the cheesecake without ripping up the graham cracker crust.
