I have a request to do a jelly roll diploma. I was thinking of finding a recipe and coating it in white chocolate??? Does anyone have any ideas or know a better idea since the person is not completely sure.

I'm not sure what you want to know? Do you need a jelly roll recipe or directions on how to make a jelly roll? I've never frosted one, just the usual dusting of powdered sugar.

Sounds like you are looking at making the diploma the main cake rather than an accent. THere are lots of recipes for making a rolled jelly roll style cake. Your idea of covering with white chocolate or a white ganache sound good, could use fondant also instead or have the school color ribbon or a black ribbon in fondant with Congratulations written on it.

Since there would be alot of x tra room on the cake board, perhaps a collage of school pictures and pics with family and friends over the years this person was in school could be copied and covered in clear contact for people to enjoy...

This is a cake being bought by an employer for an employee. They only have 10 emp. I know nothing about jelly rolls I was thinking strawberry. I am not sure about fondant since the last time I use it ..... well lets just say it did not go so well. Maybe I will try the marshmallow fondant. At this point I will take any information or help. I also need an idea of price to charge.

iv done the rolled diploma and i just used a basic cake recipe, cut the sheet in half so it was thinner and rolled it up.... it may crack a lil, but keep it in the freezer to harden up then i just iced it in buttercream.. i used a small piece of a plastic cake band to smooth it out and keep it round .. theres a pic in my photos
