I've got my second paying cake job this weekend -- its a last minute request for a sweet 16 & needs to serve 70 people. I"m doing a tier cake, so that one is chocolage and the smaller is yellow. My question is I was going to do a 14 " round & a 10" square. is that enough cake? I have both the wilton decorating guide & some yearbooks, and they both say completely different amounts of cake servings. Frankly, the one says that a 14" serves 70 people and I have a hard time believing that.
I'm using the 3" deep pans and I will torte & fill the middle.
should I add a 6" to the top?

Will probably help. Keep in mind that these are 1"x2" wedding servings, so for birthdays they are going to be larger. It's always to have better cake, then not enough.

A 12" (50 servings) and an 8" (28 servings) would be plenty since your torting and filling the cake. The servings I'm quoting are for 4" tall cakes, but with the filling and such, I don't think you're cheating them at all and the extra 8 servings from above will cover the difference.
