I usually make the cake, but for my sister's wedding I am in charge of flowers. So you'd think putting the fresh roses on the cake would be the easy part for me but...The cake tiers are going to be stacked with fresh roses tucked in the creases. Can I just put the roses directly into the cake or do I have to wrap them? I know I saw someone on TV just trim the stem short and put it directly into the cake. I would love to do that but I'm a little nervous about it. Any thoughts???
I usually make fondant roses but this is not my choice.

You can wrap the stems with saran wrap, or you could use the Wilton flower holders. They just push into the cake.
I just cut them at an angle and stick them straight in the cake. You can see a couple recent pics in my album.
I used to stick fresh flowers in cake but then I had a piece that was very close to where the flower was and it tasted different (about 18 years ago). Now I place a circle of wax paper on top of the cake and put a mound of frosting on that. Then I stick my flowers into the mound of frosting making sure the flowers stay on the wax paper but are close enough to the edge that it doesn't show.
You also have to be careful because some flowers are sprayed with pesticides--another reason not to insert into cake. HTH--Pam
I have made it a policy now that no fresh flowers are put directly on to a cake. If fresh flowers are really wanted they must be in a container and not touch the cake at all. I decided to do this after reading an article about research Tombi Peck did on poisonous flowers. Most flowers from florists are sprayed with insectisides and pestisides and can be harmful. I know some wedding decorators here in New Zealand still use fresh flowers but it is my personal choice not to. I always stress to the brides my policy and at the time they say they have never thought of it in that way. Better to be safe than sorry.
