I need help. My son sprang on us a week ago that him and his fiance are gett married at the end of June. Yea! So I have helped her plan a wedding in one week(thats another topic). Anyhow the only thing that he wants special just for him is a grooms cake. His interests are fishing and the Florida gators. My question is can I make a carved fish cake with whipped cream icing? He loves whipped cream icing. I know I could do it with buttercream but I want to make him something that will just knock his socks off. I am sure I do something with the Florida gators but I would love to make a fish. Any ideas is greatly appreciated.

Your talking about Pastry Cream or such, aren't you? If so, I think you should be able to do it. I've used it for flowers and they've held up ok. You must have a cool room, though, this stuff turns to liquid if it gets warm. (I've had it get a line of liquid around a bottom border on a warm day.)

What is it with these boys and their wc icing? That's dh's fav too and the pain in my booty! You can do it with the stabilized wc recipe from wilton but it won't look as smooth and the details won't be as defined. Also the colors may run (see my gold tooth grad pic-after sitting just a few hours the yellow and purple ran together.) Hhhhmmm....seems like I'm not painting a very good pic here-sorry lol!

Ah, just thinking here-Why not make the carved fishy cake-decorate it the way you know best that will knock the socks off and make him a small fish decorated in wc icing that can be kept in the fridge till you want to give it to him?
Or what about a cake with wc icing and a chocolate transfer fish on top? That won't run on the icing. Not as cool as a carved cake but won't run everywhere.

I assume you get to make the wedding cake too! icon_biggrin.gif

Dodibug-wow I may do that. Yes I do get to make the wedding cake and I think she picked the biggest cake ever. Its in the wilton wedding cake book. It has the white wedding cake on front with the dots and roses. So I will be busy. It feeds almost 300 people so can you say dummy cakes..lol..
I can't wait to get started..

If you need dummies, D&G Occaisions on Colonial in Orlando seems to have really good prices and lots of different sizes.

You almost gave me a heartattack for a second. I thought they were going to try to have a 300 person wedding in a couple of weeks! icon_eek.gificon_lol.gif

I don't know how particular he is about the frosting, but you might want to try Rich's Bettercreme. It will hold up better that regular whipped cream icing (though it will start to melt a bit if it gets really warm), and it's thick enough to take texture. The big mouth bass cake in my photos was iced with Rich's, I used fishnet stockings to get the scale texture and a pastry brush for the fins, then airbrushed the color on. (Thought that cake isn't a true 3D cake, since I basically just cut the cake in the shape of the fish then decorated the top.)

Now if he's like my dh he would fuss. When he says he wants wc he wants real wc. I tried a commercial product (whip n'ice, I think) a while back-blue tiara cake in my pics- and I thought it tasted pretty good and was much easier to smooth but he said it tasted like cool whip not wc! He is a picky boy sometimes! icon_smile.gif

Oh believe me he would know the difference. He is like dodibugs dh, he has to have the real thing and I really want to do this for him. The wedding is on the 30th so I have a few days to decide what to do. All of the suggestions are great. WHatever design I decide to do I am sure he will like as long as it has the wc icing.lol

I'll be in Orlando on the 30th! What time is the wedding? How should I dress? icon_lol.gificon_lol.gificon_lol.gif

I forgot-I don't know how it performs but I found some Dr. Oetker's Whip It at a Fresh Market the other day. It's also supposed to be a wc stabilizer. You don't have lots of experiment time though! I really do like the wilton stabilized recipe. You can pipe with it. I wonder if you could use the wilton spray colors once you get the basic fish iced?????

Hey dodibug the wedding is at 6pm if you want to stop by. I can give you directions... I like the wilton wc receipe also. I have only done a couple cakes with it but I am sure I can pull it off. My son is so amazing to me and I want to make this a very special day for him. I may practice this weekend. Let me know if you want to stop by. Hey you can have a piece of cake lol.. icon_biggrin.gif

back to original idea....

instead of a 3-D fish or gator carved cake....


square or round cake -- frosted in wc sprayed water blue. on top of cake the wc is left in little peaks that look like waves.

then a 3-D gumpaste/fondant figure of a FL Gator with it's mouth clamped down on the tail of a fish.

fish is in mid-air as it's got a big hook in it's mouth connected to the fishing line that leads back to the guy holding the fishing pole while either in a boat or seated on a dock. fish/guy/boat or dock are all gumpaste/fondant

Hi Fellow Floridians (& Gator Fans),

I was just wondering if incorporating "Dream Whip" would help stablize the whip cream. I read somewhere here at CC that it helps BC in hot and humid situations stay in tack.

Doug I just love your ideas. I think I will give it a try this weekend. Any directions on making a gator head or do they make a mold for this?
