Hi! My cakes are cooling and I will be filling them soon. They are yellow cake and I want to fill them with a good banana filling. Does anyone know of a good banana filling recipe? Will the bananas go brown?
Please help!!!

Oh I wish I could help, but I have never used this one, so I don't know if it is good, but here it is:

Banana Filling
3/4 cup confectioners' sugar
1/4 cup flour
1/2 cup milk
5 tablespoons butter
2 ripe but firm bananas, sliced
1 teaspoon vanilla extract
Combine confectioners' sugar, flour, and milk in a saucepan; cook, stirring, until smooth. Continue cooking until mixture thickens; transfer to mixing bowl, cover, and chill thoroughly. Beat butter into the chilled mixture, a tablespoon at a time. Fold in sliced bananas and vanilla.

I hope someone else has one they know is good. But at least you made me realize I need to go try this!!!! icon_rolleyes.gif

I would do a box of instant pudding, banana flavor of course, mixed with heavy whipping cream....makes for a great filling!

When using fresh bananas, squeeze a quarter of lemon to prevent discoloration of the fruit.

Mmm, sounds good I will have to try this I usually do the pudding and cream deal.

I have done a banana cream pie filling for a cake. It gets nice and thick fold in the bananas, dam with bc and voila icon_biggrin.gif
