I have seen many of the cupcake cakes that are out there. I have an order comminc up & have never done one before how does one go about doing this do you have to the level the cupcakes thanks for the infomation.

I level my cupcakes immediately when they come out of the oven.I use a heavy cutting board set on top of the muffin pan for about 30 seconds.Then I freeze them after they cool.

I pour my batter out of a large measuring cup (which, to me, is less messy than spooning it in.) Place a cookie sheet over them as soon as they come out of the oven and press down to level. Some people "glue" the cupcakes down on their cake board with buttercream, I don't and it works fine. I use the icing tip to cover them all evenly then gently smooth out. Decorate just as it it were a cake. Some people put borders around the outer edges, some don't. Looks fine either way.
