I am making some MINI cupcakes to take around to try to drum up some business. I wanted to fill the cupcakes. I tried to find an article on how to, but I cannot find one. So....what is the best way to fill a MINI cupcake ??
And since I have your attention icon_lol.gif can you give me some cake/frosting/filling combos ?? Wanted to try some different combos instead of the basic chocolateon chocolate.

I did some of these tonite.

I took the medium round cutter from the Wilton Fondant Cut-outs set, cut out a plug from the top of the cupcake, filled it, put the plug back it, and iced it as normal.

I do the mini cupcakes just like the regular-sized ones - with a long, round tip. I use tip 230 (I think - very long slender tube with an ovalish slanted opening), but any smallish tip will work well for the minis. Try a tip 5 or a small star tip. Put the filling in a bag and just poke the tip into the top center of the mini cupcake. Hold the cupcake lightly in your fingers and you can feel the filling expanding in the center and see the top begin to rise. Stop before you explode the cupcake - the frosting will cover the hole in the top. No cutting or plugging or anything - clean and fast. I like the WBH lemon curd in either lemon or yellow cake, and there is a recipe in the files here for Giant Ding Dong cake. I make cupcakes with the batter and fill them with the white ding dong filling. Whipped or regular ganache on the chocolate and cream cheese frosting with the lemon curd.....

I use tip 12 if you only want a small amount of filling.

I prefer the cut-out method over the tip method, only because I like a LOT of filling in my cupcakes, and I've done both ways, and the cut-out was more pleasing, in my opinion. Either way will work...it all is just personal preference, I guess.
