I was going to suggest the flower nail too - I only just learned that trick and it works great.
Cakes sink because of excess sugar and/or fat or leaving in the recipe.
Over mixing is another common cause.

I know your problem. I have that too. Try lowering your rack( your oven rack...
) to the lowest level. I have to do that with mine. Also, if you don't have a flower nail, you can use cake decorating tip. Just make sure that you don't forget about it once it's baked.
Lowering the rack should solve your problem. I also up my temp to 375 degrees. And you might try baking it longer. I usually have to bake mine for an hour, sometimes longer. One sure fire way to tell if it's done in the middle is to stick a wooden skewer into the middle. If it comes out clean, it's done!
