stick your flower nail in there-it will act like a heating core

Yep, I think that's the solution. Just for comfort, I have 2 8" cakes that have sunk and are sitting on my counter. Let's sulk together!

I was going to suggest the flower nail too - I only just learned that trick and it works great.

I've noticed that when my oven is at to high of a temperature my cakes seem to sink in the middle. Use an oven thermometer and make sure your oven is right. HTH

thanks for all the help! my oven might be to blame... I just pulled out two 8" vanilla butter cakes and they also sunk in the middle! icon_cry.gif another thing, might seem like the only one, but I don't have a flower nail!

Cakes sink because of excess sugar and/or fat or leaving in the recipe.

Over mixing is another common cause.

Here's a troubleshooting chart for butter cakes:

I know your problem. I have that too. Try lowering your rack( your oven rack...icon_wink.gif ) to the lowest level. I have to do that with mine. Also, if you don't have a flower nail, you can use cake decorating tip. Just make sure that you don't forget about it once it's baked.

Lowering the rack should solve your problem. I also up my temp to 375 degrees. And you might try baking it longer. I usually have to bake mine for an hour, sometimes longer. One sure fire way to tell if it's done in the middle is to stick a wooden skewer into the middle. If it comes out clean, it's done!
