I have my first paid cake for this friday. It is a Strawberry Cake not sure how many layers yet. I will be baking it tomorrow.
The design is a chocolate b/c basketweave on the sides with green grass b/c on top with other accents. (I am trying WBH buttercream for the first time)
I need ideas for fillings....
Any help...TXH

I make strawberry cake sometimes and I love it with a nice custard filling. I make a nice stiff custard, and a stiff whipped cream, I fold them together.
It tastes great and really balances out the strawberries.

What about a banana "mousse". Strawberries and bananas are a great combo. I have had lots of compliments on this super easy filling.

I take a box of banana pudding and instead of adding milk, I mix it with whipping cream in my KA. It's delicious! I've done this with other pudding flavors as well.

Congrats on your first paid cake!!

I just did one this past weekend and it was a strawberry cake with cream cheese icing. I got the recipe from here. It was the crusted cream cheese icing. It's really good!!

By the way, congrats on your first paid cake! thumbs_up.gif Wishing you many more!! party.gif

I would probably do a white chocolate filling. I've done a strawberry cake with a white chocolate glaze and the flavor combo. is always a hit!

Chocolate mousse would be a good one. It would go with the chocolate BC. Why don't you give all of the choices that you feel comfortable with making to your customer and have them decide. This way you don't have to go crazy thinking about it and you know they will like it.

You could go with something Yummy and gooey like Chocolate Ganache...it would be really yummy with the strawberry cake!! You can also whipp ganache after it cools to make it more fluffy! I use the Ganache I recipe from here all the time, it's wonderful and extremely EASY!

Yeah I wish she gave me full choice on making this cake...I finally got her to choice a flavor of cake - strawberry. It will have a sprinkler on top for her hubbies b-day. She says he loves all food. So that is where I am in a pickle...I have a bavarian creme ready to go but I am feeling like I need to try something new???? At least I have the design for the cake now I just need the cake made....I dunno should I am all confuseded. icon_cry.gificon_cry.gif

Just say look, here ar the different ones I can make. I'm not sure which one he would like better so why don't you give me an idea. After all he is your husband not mine. Well, maybe not the last part but you know what I mean, something like that.
That way they have nothing to complain about later. I just did a cake this week-end where they gave me no input. So I just used bc filling and then came to find out that they thought the cake was too sweet. If they didn't want a sweet cake they should have told me what they wanted before hand.

I agree. Present them with 4 of 5 creative choices and tell them they have to pick from those if they already didn't have something else in mind. They might be hesitant to tell you what they want because they are not aware of what the options are. Sometimes it's easy for us as decorators and bakers to know there are a million options availabe, but to someone not in the field they might need those options laid out for them.
