I have not had much experience with royal icing. Will that dry hard on a gumpaste plaque? Will it chip or break easily once it has dried?

Any other suggestions to write on gumpaste? Edible markers?

Edible markers or royal icing!

Either one would work. I have also painted (paste colors mixed with extract) writing on them.

There's no reason the royal would crack off unless you did something other than write, let dry, and stick on the cake. Actually, you wouldn't need to let it dry necessarily, just don't put the royal and gum paste in the fridge or freezer. The condensation may ruin them.
