the wilton leveler is too expensive and i have got a serrated knife but its not big enough to cut a 10 inch cake and i've been going to a few kitchen shops to find a longer serrated knife but with no luck. is there anyone out there with any ideas on what i could do?

I seem to remember Alton Brown uses the blade from a hack saw (I think that's the tool). Try the hardware store and you might find a fairly stiff but thin blade that will be long enough to do cakes wider than 10".

Many people will probably recommend the Agbay leveller, but it's a nice chunk of change.

Hi

I was taught to use fishing line. It works so well and easy!

I bought a wilton cake leveler definitely not worth the money. Thread works great. Quilting thread. Especially on larger cakes. For layers, you take the thread, in a contrasting color, wrap it around you cake then take both ends and pull it will go through the cake making a nice clean cut. The contrasting color is so you can see where your thread is going to cut your cake and get it nice and even. My guess is this is the same way you would use the fishing wire. Leveling the top is a little more tricky. I usually end up using a very large serrated knife to clean it up a bit. I also saw Alton Brown use the saw blade. I would like to see if there is a blade with a finer serrated edge. I cringed when I saw it rip through the cake, if that cake could feel it it would have screamed in agony. But it is the same concept as cake levelers and definitely works.
