I am writing G C U on a cake for Georgian Court University...DO i write it in that order or is is G U C? Thanks for the help!

GCU is correct.

I think you were thinking of monograms, that's the ONLY time the last letter goes in the middle, and then it's written larger than the other letters.

Thanks for clearing that up for me. Monograms is exactly what I was confusing them with.
