Freezing A Mmf Cake????

Hi there,

I am making my first wedding cake. I have a tasting today. The couple would like cupcakes. YIKES!!! But they would also like a 6 in round cake for the top of the cupcake tree to save for their first anniversary. Now here is the question... Can I make a MMF cake filled with buttercreme so it can be frozen??? What happens to MMF when you freeze it? Also how would I tell them to wrap it??? Thanks so much

If if read correctly.. you are NOT supposed to freeze anything w/mmf. I'll give ya a bump in case I'm wrong. Sometimes they say you shouldn't even refridgerate mmf cakes due to some condensation forming on the cakes, but I do..
