While doing the trial run of my son's cake this weekend, I thought I would make some petit fours as well. Well Icing them turned out to be a nightmare. I filled them with rasberry filling and couldn't for the life of me get an even coating of icing on the sides. Any advice on how to make them look even without it taking 9 hours.

i haven't done any filled ones so I don't know how much more difficult that would make the process. Here's what we did:

freeze cake
cut into squares (I read that someone uses dental floss-will try the next time)
freeze again until needed.
made quick pour fondant from this site in a small pot so its deep
use a toothpick to dip cake completely
take a fork and slide off of toothpick o place on cooling rack.

as long as my fondant was the right temp, they all got an even coat. I burned my fingers a bit, be careful and have everything set up before hand. We didn't try a bamboo skewer and it would probably be better. Think we'll try it the next time.

This is all advice I read from several posts here. Thanks for all of the advise!!!
