Working on my first one tonight for tomorrow delivery. 4 tiers 12, 10, 8, 6 frosted in buttercream with different white on white designs, swiss dot, cornelli, scrolls, lattice.
YUCK!! Always thought I did pretty decent corners on my sheet cakes - don't know what it is with these square but I don't like the corners at all. Hopefully I can hide most of the bad spots with decor.
Now to move on to doing the cornelli (Thank God its the 6") pray for my poor hands - and still have the grooms cake to do.
Good luck with the cake! Square cakes are definitely a challenge! I never enjoy doing them, but I seem to get so many orders for them!! Hang in there ... I'm sure it will be beautiful! Make sure to post a picture! ![]()
I'll have to do a pictorial on it soon ..... I'm not sure I explain it well, but here goes.....
When I ice one side, I push the icing out past the corner. Then I take the spatula (which I have run under hot water for the 'hot knife' effect) and push, or "fold", the excess icing around the corner.
