Hello CCR'S... last night I was making a 7 Up pound cake for an annual bazaar to sell on Saturday...I didn't have enough sticks of butter (and I was too lazy to go and get more) so I used (gulp)...some butter spread(with veg. oil!!!!!!)
I know, I know..BIG MISTAKE!!! well, I figured something wasn't right because 1. - the batter wasn't the right consistency(and chose to bake it anyway)...2- the cake didn't rise much in the pan...3- when I turned the pan over to release the cake onto the cooling rack...THE RACK SHOOK ON THE COUNTER!!! LOL But, nontheless, I tried a slice (a plastic knife could barely cut through it...tasted ok, but not too much flavor and very hard to chew )
So today after work, I went and got my butter and will try again after I finish this post
BTW...the reject cake - I put it in a bag to throw out but tossed the bag on the floor by the garbage can and there was a resounding THUD and the floor vibrated!!! Good Grief!!! ![]()

I'm guilty of doing stuff like this, too. Once while making Christmas cookies, I realized I didn't have cocoa powder to make double chocolate cookies, so I used hot chocolate mix. A word of advice: don't substitute hot chocolate mix for unsweetened cocoa powder : )
ok, it's now the next morning and I made my 2nd cake...this one had a lot of weight to it as well
... not sure what was wrong(not like I haven't made this before, with great results!!...guess it wasn't meant to be made for today ![]()

This reminds me of the time I was making pumpkin bread for a gift basket. I had run out of veg. oil--how do you do that
and since I live out in the middle of nowhere, I decided to substitute olive oil for the regular veg. oil. Awful--DUH! What was I thinking?
