Is it possible to stack a cheesecake for a wedding cake?? I can't imagine it but that's what a bride wants.

It is possible, not sure exactly how you do it bu tif you go to
www.elegantcheesecakes.com they stack cheesecakes. I love those cakes on that website. I would love to know how they do it. So when you figure it out ('cause I'm sure you will) icon_smile.gif please let us know.

I frequently do cheesecake wedding cakes - I use the recipe out of the Cake Bible - 'frost' in IMBC - I get a three inch tier instead of a four inch one - I stack like any other cake with dowels and cardboard rounds - the 'display' time is shorter - only about 3 hrs....

What if you used the Wilton pearl ball separators like in my "Russian" cake in my pictures.... you could use the balls or just sit the plates right on the supports..... They are hidden right in the cake, and you just cut them to size like any other dowel..... I LOVE them !

You treat them just like any other cake. Cardboards, dowels, all that.

Oh, and if I need a 3" tier I bake 2 1.5" cheesecakes and stick together with just enough buttercream (no doweling in between, just like you'd do cake layers) and for a 4" tall, 2 2" cheesecakes.

I had stacked cheesecakes for my wedding cake. Of course, this was before my CC days and I just plopped those bad boys one right on top of the other! LOL... I just went to Target and bought pre-made Cheesecake Factory cheesecakes. One 6" and one 10". The cheesecake was so dense that it didn't budge an inch. No icing, but I put fresh roses in an oasis and placed it on top. Walah... $35 wedding cake. Okay, I was a cheap bride, but we only had 20 people! (2nd Marriage)
