I decided today to try something I've learned from here. I was never good at baking cakes from scratch. Each time my hubby told me to quit trying and bake from a mix. Well today I made a vanilla cake from scratch but I added meringue powder to it, like someone said to do (sorry can't remember who
). Anyways, it worked great!!! the cake raised well, was very moist and hubby even said yum while taking a bite. So now meringue powder is my new friend!!!!

That's great!! Did you use regular eggs also? Did you have to increase the liquid in your recipe? Do you have the link to the thread where you got this advice? (I'd like to know the logic behind adding this). Sorry for all of the questions, but I've never heard of doing this before.

I add meringue powder to all my cakes, mix or scratch. You follow your recipes as it is, and add 1T meringue powder to it before mixing. It works! The cake rises higher! My guess is it's just like whipping egg whites...they fluff up, and the meringue powder does the same thing!
yes Jen that's what I did. and works miracle for me. I'll have to experiment on other recipe now.... if only we could finish those home improvements... changing windows, redoing the bathroom, redoing the exterior.... but it was time, hubby just found an ant nest starting in one exterior walls. YUCK!!! there wasn't a lot of them YET but let me tell you we put loads of stuff to kill them and now they're DEAD!!!!
