I have an order for a carrot cake coming up soon. Does anyone ever use any other kind of icing besides cream cheese for a carrot cake? I have never worked with this kind of frosting before and am kind of wondering how it would work with a 3D cake- oh yeah...I forgot to mention it's a boob cake. (Never done one of those either icon_redface.gif ). So, I am planning on gold fondant "pasties" and tassles. Will they stick to that kind of icing? Should I used buttercream instead so it will crust? HELP!!!

1 cup crisco
1 stick of butter
1/2 pkg cream cheese
1 tbsp vanilla
water
2 tbsp meringue powder mixed with 2 pounds powdered sugar
(thank you ChefCindy for the recipe)

It crusts and works like buttercream but is super yummy!

I like to make my regular buttercream icing and then add about a 1/2 of a package of cream cheese...enough to get the taste. It crusts great and does well with decorations.

I know Betty Crocker has a carrot cake mix...I think this might work well. You might even be able to add the pudding and extra egg for a more dense cake. As for the pudding flavor...I am thinking you would be safe using vanilla.

Good luck! icon_smile.gif
