Help With 12 X 18 Sheet Cake

I have the hardest time trying to put my top layer on the 12 x 18 sheet cake when I do a filling. Any suggestions on how to transfer that in one piece? Or do you have to do it in pieces?

Use a large cookie sheet. The one with only one side on it. You can slide it between the layers and slide the layer off easily.

Whenever I need to move large pieces of cake, I use a cake board. This helps keep breakage to a minimum. Not sure if you're already doing this.

Here's me vote for the cookie sheet.

Or freeze your layers, then fill while the are frozen. The layers are so much easier to handle frozen - gives it more stiffness and they are less prone to break. Then just let it sit out for a little while to defrost completely and then you can ice and decorate.

slightly frozen ..... cardboard .... they seem to slide off of the cardboard easier than from a cookie sheet for me.

I freeze it first. It is so easy to put on top frozen!

Thanks for all your quick feedback. I am making a cake for tonight and was in tears when I crumbled it for the second time. So my third try is in the oven now and I'll try freezing it first.

A thread from earlier today also suggested cutting the top layer in half so that it's easier to handle. This might help if you don't have time to wait for the cake to freeze.

I do this; Cut cake in half. Remove top half using a floppy plastic cutting board and place in freezer while filling the other half. Once the top half is half or more frozen it is easy to handle for putting back on the bottom layer evenly and without breakage.
